Healthy spring lunch salad

Here in Belgium, the weather is very beautiful the last days. Today it was 34°C, that’s quiet hot for this time of the year. So that’s a good opportunity to enjoy delicious salads and healthy spring food! 🙂 I made a lunch for tomorrow at school and it looked tasty so I thought I could write an article about it.

Ingredients for 1 person

  • boiled spaghetti for 1 person
  • 2  soup spoons of yogonaise
  • a little lime juice
  • 1 slice young cheese
  • 6 cherry tomatoes
  • 1/4 apple
  • a couple of olives
  • grated pecorino (or another kind of Italian cheese)
  • cucumber (as much as you like)
  • spring onion
  • chive
  • pumpkin seeds
  • sunflower seeds

    Cut everything as small as you want, put the ingredients together and mix thoroughly. Looks tasteful, isn’t it? 😉
